Hi all this weeks recipe comes from my kitchen. My Nana used to make this, and it's the only way I'll eat summer squash.☺
SUMMER GARDEN FUN
2 medium zucchinis
2-3 summer squash (yellow)
1/2lb sliced pepperoni (you can omit this if you don't have or like it)
Large Jar tomota sauce (32oz size) or
22 oz can crushed tomatoes and add a 1/2 tsp of basil or oregano and 1/2 tsp crushed garlic.
Slice the zucchini and Summer squash into 1/4- 1/8" slices. Put in a pot, with the sauce or tomatoes along with the pepperoni and cook on med heat till the zucchini and squash are cooked, adding just a little water if needed.
It's a great side dish or even good over penne pasta....
